2 small zucchini, cleaned and sliced into 3-inch X 1-inch sticks
2 egg whites, beaten
2 tablespoons freshly grated mozzarella or parmesan cheese
1/4 cup plain or Italian breadcrumbs
1/2 teaspoon salt
Pinch ground red pepper
Vegetable cooking spray
1 tablespoon extra virgin olive oil
Preheat oven to 475 degrees. Pour the beaten egg whites in a shallow pan. Drag the zucchini sticks through the egg whites. In a large ziplock bag, combine the grated cheese, breadcrumbs, salt and red pepper. Place the zucchini sticks, two or three at a time, in the bag, and gently shake until they are well coated with the breadcrumb/cheese mixture. Place the zucchini sticks in a single layer on a baking sheet coated with cooking spray. Evenly drizzle olive oil over the zucchini sticks. Bake 5 minutes. Turn and bake 3-5 more minutes or until zucchini sticks are crispy.
If you like really spicy zucchini sticks, add a little more red pepper.
Suggestions for dipping sauces are ranch dressing or a marinara or a mixture of mayo, whipping cream and horseradish or a remoulade sauce.
