Fresh Garden Tomatoes with Parmesan & Basil

PADUCAH, KY - SuperValu Foods Recipe of the Week - Serves 6

4-6 medium to large fresh garden tomatoes, 
                skin removed and cut in big bite-size hunks
3/4 teaspoon garlic salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
2 tablespoons finely chopped fresh basil
               or (1/2 teaspoon dried basil leaves)
1/2 cup shredded Parmesan cheese


Lightly grease a 9" X 13" baking dish. Garlic salt and pepper the tomatoes. Line the dish with the prepared tomatoes. Drizzle with olive oil. Sprinkle with basil and cheese. Bake in 350 degree oven or under a medium hot broiler just long enough for cheese to start to melt (about 10-15 minutes in oven  or 5-7 minutes under broiler). Serve warm. A scoop of this is also a terrific topping on your favorite burger.

If the tomatoes are still firm, cut them in think slices instead of hunks. If they are starting to get overly ripe and you have an abundance of them, cutting them in hunks is a great way to try this recipe. It's important to remove the skins because they are a little thick and tough this time of year. The insides are extra juicy and tasty, and the tough skins can take away from the rich summertime tomato flavors.
