Makes 1 1/2 cups
3 cloves garlic
2 cups fresh basil leaves
1/2 teaspoon salt
1/2 cup fresh grated Parmesan cheese
1/4 cup pine nuts or walnuts (or pecans)
1/2 cup extra virgin olive oil
In a food processor, pulse the garlic, basil, salt, cheese and nuts; slowly pour in the oil. Place in an airtight container and refrigerate. Drizzle a little olive oil on top (which will seal the sauce0 before placing top on container.
Not only is this flavorful basil mixture great with pasta, serve it with your favorite fish, chicken, baked potato, rice or on sandwiches.
