Jonathan or Golden Delicious apples, cored, peeled & sliced
Apple juice
Sugar
Salt
Butter
Chopped fresh thyme

Place desired number of prepared apples in heavy pot that has a lid. Add apple juice to reach half way up the sides of the layers of sliced apples. Bring to a simmer, cover, and cook until the apples are soft when pierced with a paring knife. The timing will depend on the type of apple and the amount.

Add sugar and salt to taste, a tablespoon of butter, and a generous pinch of thyme. Stir vigorously until the sugar has dissolved and  
butter has melted. Serve warm or cold.
