Pecan Crusted Tilapia Fillets

PADUCAH, KY - SuperValu Foods Recipe of the Week - Serves 6

6 (6 ounce) tilapia (or other firm white fish) fillets
1 cup toasted pecans
1 cup plain bread crumbs
2 eggs, beaten
1 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon Creaole seasoning

Rinse fillets and dry on paper towels. Puree pecans and bread crumbs in a processor. Make an egg wash with egg whites and milk. In a separate bowl, season flour with salt and pepper. Sprinkle fish with Creole seasonings and dredge in seasoned four. Put in egg wash and then in mixture of pecans and bread crumbs. Place on lightly greased baking sheet. Spray a little more vegetable oil over tops of crusted fillets. Bake in a preheated 450 degree oven for about seven minutes. Serve with a lemon butter sauce. Melt butter and add lemon juice and lemon zest.

This rich crunchy pecan coating makes the fish fillet a extra tasty.
