Serves 8
1 (15-ounce) can prepared pumpkin
1 cup evaporated milk
1 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 butter or yellow cake mix
1 cup chopped pecans
1 cup butter, melted
Whipping cream
Ground nutmeg
Stir together the pumpkin, milk, sugar, vanilla and cinnamon. Pour into 9" X 13" baking dish. Sprinkle the cake mix evenly over the pumpkin mixture. Then sprinkle the pecans over the mix. Drizzle melted butter over pecans. Bake at 350 degrees for one hour or until golden brown. Top with whipped cream and a slight sprinkle of nutmeg.
Whipped Cream
1 (8-ounce) carton whipping cream
2 tablespoons confectioners sugar
Dash of ground nutmeg
Beat the cream with an electric mixer-at low speed-until frothy. Increase speed to medium-high and gradually add sugar and nutmeg, beating until soft peaks form. Makes 1 cup.
