Serves 2
2 medium vine-ripened tomatoes
8 ounces fresh mozzarella, sliced in rounds
1 tablespoon chopped sweet onion (optional)
Balsamic vinaigrette dressing
12 fresh basil leaves, 4 chopped, 8 whole leaves
Black pepper
Slice tomatoes and place flat on serving plate. Alternate cheese slices with tomato slices. Sprinkle with chopped onion (optional). Drizzle vinaigrette over tomatoes and cheese. Add chopped and whole basil leaves. Grind black pepper over top.
This is a fresh and flavorful combination of ingredients.....so easy to make. Enjoy!
