Broccoli and Blue Cheese Casserole

PADUCAH, KY - SuperValu Foods Recipe of the Week - Serves 6
2 tablespoons melted butter
2 tablespoons flour
1/4 teaspoon salt
3 ounces cream cheese, softened
1 ounce blue cheese, crumbled
1 cup milk
2 (10 ounce) packages frozen chopped broccoli, cooked and drained
1/3 cup crushed Ritz crackers
In a saucepan, blend the butter, flour, salt and cheeses. Stir in the milk and keep stirring until the mixture starts to boil. Add broccoli and continue to stir. When all the ingredients are mixed, turn into a lightly greased one quart baking dish. Top with cracker crumbs. Bake, uncovered at 350 degrees for 30 minutes.
