Makes 24 spirals

2 teaspoons extra-virgin olive oil
2 garlic cloves, minced
6 ounces fresh spinach, finely chopped
Salt
Ground black pepper
1 sheet frozen puff pastry, thawed (I use Pepperidge Farms)
2 ounces freshly grated Parmesan cheese
1 ounce crumbled Feta cheese

In a large skillet, heat olive oil to medium. Add garlic and cook for a minute or so. Add the spinach and stir together. Allow the spinach to cook for 2-3 minutes, stirring occasionally until wilted. Add a few shakes of salt and pepper. On a clean, dry surface sprinkle a small amount of flour to prevent sticking and lay down your sheet of defrosted puff pastry. Using a rolling pin, roll the pastry into a 10” X 14” rectangle of even thickness. Spread the spinach evenly across the surface of the rolled out puff pastry sheet. Sprinkle the cheeses evenly over top of the spinach, covering the entire surface of the pastry. (If you add sausage this is when you do that.) Roll the pastry out, wrapping the ingredients into a long tight roll. Wrap the completely rolled log in parchment or waxed paper. Place in the freezer for about 30 minutes. This makes it easier to cut into spirals. Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper and set aside. When you take the pastry log out of the freezer, use a serrated knife to slice it into 24 even spirals. The easiest way to do this and have even size spirals is to cut the roll in half, then each of those pieces into quarters, then cut each of those pieces into thirds. Place each circle on the paper-lined baking sheet and bake for 20 minutes or until lightly golden. Serve warm.

A friend shared this recipe with me. She got it from the Yummly emails, this one by Emily Bites, and tried it. Then I had to make them and agreed, they are very good and easy to make. Even at room temp they taste great.

If you like a meaty roll-up you can add a pound of cooked, grease drained, and finely crumbled hot sausage right before you roll it up. Bake the same amount of time.

If you choose to make this a week or so ahead of time, keep it frozen until about an hour prior to time to serve. Cut into spirals, place on baking sheet, bake and serve. My grandchildren like these for a snack or even for a quick lunch. I keep a roll frozen for a quick and yummy treat.
