1 (10 ounce box) frozen chopped spinach
Salt to taste
4 fresh boneless chicken breasts
(if frozen, thaw & cut into bite size pieces)
1 tablespoon all-purpose flour
1 1/2 teaspoons garlic pepper blend
Vegetable cooking spray
1/2 pint whipping cream or Half & Half
1/2 cup shredded fresh Parmesan cheese
Paprika
Thaw and drain spinach. Preheat oven to 350 degrees. Place half of the drained spinach into casserole dish coated with cooking spray. Lightly salt the spinach. Coat the chicken pieces with flour seasoned with the garlic pepper. Top with remaining spinach. Season with a little more garlic pepper. Pour whipping cream over chicken and spinach. Sprinkle with Parmesan cheese. Lightly sprinkle with paprika. Bake uncovered for about 40-45 minutes. The chicken will be lightly browned, tender and absolutely delicious.
Place the thawed spinach in layers of paper towels and squeeze them. This is the best way I've found to get the spinach dry.
