Serves 4
5 cups fresh broccoli florets
1/2 teaspoon salt
3/4 cup slivered almonds, toasted
1/2 cup crispy cooked & crumbled bacon
1/4 cup chopped red onion
3/4 cup fresh green peas
3/4 cup mayonnaise
1 tablespoon apple cider vinegar
1/4 cup honey
In a large glass bowl, place fresh broccoli florets (chop any tender stems into small pieces and include them). Add a little salt, almonds, bacon pieces, onions and peas. Toss to combine. In a separate small bowl combine, mayonnaise, vinegar and honey. Whisk together until smooth and fold into the broccoli mixture. Refrigerate for an hour and gently stir the mixture right before serving.
