1 garlic clove, minced
2 teaspoons finely chopped fresh oregano leaves
2 teaspoons finely grated lemon zest
2 teaspoons fresh lemon juice
2 tablespoons extra-virgin olive oil
1 teaspoon Jane's Krazy Mixed-Up Salts
2 large tomatoes, cut in half
Heat a grill to medium-high. In a small bowl, combine garlic, oregano, lemon juice and zest, and 1 tablespoon olive oil. Season with Jane's Salts. Lightly oil the hot grill. Brush each tomato half (the cut sides) with remaining olive oil. Place, cut side down, on grill. Grill until lightly charred (about 4 minutes). With a metal spatula, flip tomatoes and grill until skins blister and begin to char (2-3 minutes). Place tomatoes on a serving platter, sprinkle a little extra lemon zest on top. Serve tomatoes warm or at room temperature.
