Serves 4

2 large firm but ripe garden fresh tomatoes
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon garlic powder
Fresh basil, rosemary, thyme or oregano 
        (finely mince one of the herbs to equal 2 tablespoons or use 1 tablespoon dried Italian seasonings)
1/4 cup shredded fresh Parmesan cheese

Options:
1/4 cup Panko bread crumbs
3 tablespoon olive oil

Cut tomatoes into thick slices (about 4 slices per tomato). If cores are thick and white, cut out. If skins are tough, carefully peel them. Best if you can keep the skins on. Line a baking sheet with aluminum foil and place tomato slices. Sprinkle with salt and pepper. Sprinkle each with garlic and whatever seasonings you choose. Sprinkle Parmesan cheese evenly on tops of tomatoes. The option in ingredients would be to add the bread crumbs and drizzle of olive oil.

Preheat oven to 450 degrees or turn on broiler. Place the prepared tomato slices in oven just long enough for cheese to melt (or bread crumbs to brown).  Bake for about 10-15 minutes or broil for a few minutes.
