3 pounds sweet potatoes, cut into about 2-inch wedges
1/2 cup butter
1/4 cup honey
2 teaspoons lemon juice
Salt
Freshly ground pepper
Ground cinnamon
Extra honey for dipping
Preheat oven to 350 degrees. Pat all the potato wedges dry with paper towels. Place the dried sweet potatoes in a single layer in a lightly-buttered 13 x 9-inch baking dish. In a small saucepan stir together butter, honey and lemon juice until butter melts. Pour butter mixture over the sweet potatoes. Toss potatoes in honey mixture until all are well coated. Sprinkle with salt, a pinch of cinnamon and black pepper. Bake uncovered until just fork-tender stirring and turning with a wooden spoon (35-40 minutes). Do not over bake.
I like to serve honey on the side for dipping. Such a yummy recipe for sweet potatoes.
