2 cups hummus
(buy prepared hummus in refrigerated section OR make recipe below)
1 cup Greek yogurt
1/2 cup chopped tomatoes
1/2 cup sliced kalamata olives
1/4 cup crumbled feta cheese
1/4 cup diced red bell peppers
2 tablespoons thinly sliced green onions
Zest of one lemon
Pita chips or pita wedges for dipping
Spread the hummus at the bottom of a shallow rectangular or square dish. Spread the Greek yogurt layer on top of the hummus. This works best using a small spatula or spreading knife. Sprinkle the tomatoes, kalamata olives, feta and peppers on top. Top with the green onions and lemon zest.
Chill for an hour, especially if you make your own hummus. Serve with pita chips or pita wedges.
Easy Hummus Recipe
Makes 2 cups
1 (15 ounce) can garbanzo beans, drained, liquid reserved
1 clove garlic, crushed
2 teaspoons ground cumin
1/2 teaspoon salt
1 tablespoon olive oil
In a blender or food processor combine garbanzo beans, garlic, cumin, salt and olive oil. Blend on low speed, gradually adding reserved bean liquid until desired consistency is achieved.
