2 pounds fresh or frozen whole green beans, ends trimmed
Juice from 1 lemon
1 tablespoon extra-virgin olive oil
3 tablespoons sweet cream butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes
1 tablespoon lemon zest
Salt
Ground black pepper
Drop prepared green beans in a large stock pot of salted boiling water and let them bubble until they are a bright green and crisp-tender, about two minutes. Remove from water and set aside. Squeeze lemon juice on them. In a large heavy skillet over medium heat, add the oil and butter. When butter is melted, add the garlic, red pepper flakes and saute about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about five minutes. Add lemon zest and season with salt and pepper.
