1 1/2 pounds bone-in chicken breasts, skinless or skin on
Salt
Ground Black Pepper
1 tablespoon Italian seasonings
8 cloves garlic, smashed
1 cup wild rice blend (NOT the quick cook kind)
1/4 cup fresh squeezed lemon juice
2 cups chicken broth
8 fresh parsley sprigs
1 lemon, seeded and sliced in rings
Season chicken breasts with salt, pepper and Italian seasonings. Place the chicken breasts in the bottom of a slow cooker. Add the garlic and rice. Add lemon juice to the broth and stir. Pour this mixture over the rice and chicken. Stir once to coat. Place the lid on the slow cooker and set on low for 8 hours. When ready to serve, spoon rice onto individual plate and top with chicken breast. Garnish with fresh parsley sprigs and lemon slices.
