Serves 12

1 large package raspberry gelatin
2 cups water
1 large can Oregon blueberries in water
1 large can crushed pineapple, drain off extra juice
8 ounces cream cheese, softened
8 ounces sour cream
1 teaspoon vanilla extract
3/4 cup sugar

Dissolve gelatin in 2 cups boiling water. Stir well and allow to cool for at least 15 minutes. Stir a few times to be sure it's all dissolved. Pour in the blueberries, including juice. Add drained pineapple. Stir until all is well mixed. Pour into a 9" X 13" glass dish. (If taking this to someone who will only eat a few servings, use two 9" X 9" glass dishes and keep one for yourself - it makes it a little thinner but still works.) Refrigerate for a couple of hours. It does take a while to congeal. With a mixer, whip the softened cream cheese, sour cream, sugar and vanilla until smooth and creamy. Cover and place in frig and when the blueberry mixture is solid, spread the cheese mixture evenly on top. Cut in squares and serve it just like this or sprinkle a few berries on top.

This is an extra tasty recipe-not too sweet. It was shared with me a couple of weeks ago, by a young mother. Her daughter and my granddaughter were having dance class and she started talking about how much her children request this recipe. The Losher name stays with this recipe because it's one of those treasured recipes that's been handed down in their family. Their children request this for birthdays and special occasions. I've already made it three times to share with friends. It was a treat when she agreed to share with our listeners/readers.

The last time I made this, I added 3/4 cup chopped pecans because my neighbor had just given me a bag of freshly shelled ones. It was extra yummy. I also substituted 2 cups fresh blueberries for the can and didn't drain the pineapple. It was very very tasty.  

Tip for quicker congealing. Use a cup of boiling water to dissolve raspberry Jell-O and then add cold water and a couple of ice cubes to make the second cup. Also, place the blueberries and pineapple in the frig the night before. When you add them to the gelatin, it reduces the congealing time to 30 minutes. The whole process is cut down to about 45 minutes.
