Serves 6

1 fresh pineapple, cut into thick slices, 
                or 1 can pineapple rings
1/3 cup firmly packed light brown sugar
Vegetable cooking spray
1 tablespoon butter
1 cup orange juice
3 tablespoons rum or 1 teaspoon imitation rum extract
2 tablespoons honey
1 1/2 cups vanilla frozen yogurt

Sprinkle both sides of the pineapple slices with brown sugar. Coat a large nonstick skillet with cooking spray. Add the butter and place over medium-high heat until the butter melts. Add pineapple sllices and cook about 4 minutes on each side. Remove and place in individual shallow bowls or small indented plates. Combine orange juice, rum and honey in the skillet and bring to a gentle boil. Cook and stir until the mixture is reduced to 1/2 cup. Pour the mixture evenly over each pineapple slice. Top each slice with 1/4 cup frozen yogurt. Serve immediately.
