Shrimp & Celery Stuffed Tomatoes

PADUCAH, KY - SuperValu Foods Recipe of the Week - Serves 2
2 medium size yellow or red summer fresh/firm tomatoes
1 pound 36/40 count shrimp, peeled, cooked & chilled
1 tablespoon dry Old Bay Seasoning
1 lemon (cut 2 thin slices, squeeze the rest into shrimp mixture.
Put lemon rinds in water when boiling shrimp)
1 teaspoon salt
3/4 cup chopped celery
1/3 cup chopped sweet onions
1/3 cup red (or green) bell peppers
1/4 teaspoon lemon pepper
4 drops Tabasco sauce
2 tablespoons Hellmann's mayonnaise
1/4 teaspoon lemon pepper
Hand-full mixed dark greens
2 sprigs fresh parsley
2 thin lemon slices (from the original lemon)
Pinch Lemon Pepper on top!
Turn tomatoes upside down. Level off top of tomato (the indented end). Turn over and cut into thin wedges keeping the lower part connected. Boil shrimp in just enough water to cover them (season water with Old Bay, lemon rinds and salt).

Cut shrimp in bite size pieces (save 2 for garnish) and combine with celery, onions and bell peppers. Stir the lemon pepper and drops of Tabasco into the mayo. You may want to add a little more if you like more kick. I personally like the flavors without that "hot" kick.
Place tomato in a bowl lined with dark greens. Open up (like photo) and place half of shrimp mixture in each tomato. Top with parsley sprig, lemon slice and tiny pinch of lemon pepper.
* How to cook the shrimp:
Boil just enough water to cover the shrimp. Season water with salt, lemon rinds and Old Bay Seasoning (or liquid Zatarain's Shrimp Boil). Drop shrimp in and allow the water to just barely come back to a boil. Remove from heat, pour hot water off and cover with cold water and ice. As long as they're hot, they are cooking. It's possible the shrimp will be done "before" the water comes back to a boil. Keep an eye on them. As soon as they start to look firm and white and start to"curl", they're ready. Over cooking shrimp is just not an option.
