Spicy Sausage Egg & Tortilla Casserole

PADUCAH, KY - SuperValu Foods Recipe of the Week - Serves 10-12
8 large or 12 medium flour tortilla shells
1 pound hot sausage
1 (12 ounce) can original Rotel tomatoes
1/2 cup chopped sweet onion (optional)
1/2 cup chopped green and/or red bell pepper (optional)
2 cups shredded Sharp Cheddar cheese
6 eggs
2 cups milk
In a large skillet, brown and crumble sausage. Drain off grease. Add Rotel to the cooked sausage and bring the mixture back to a boil. If you use onions and bell peppers, add to the sausage mixture at this time. In bottom of lightly greased 9" X 13" deep baking dish, layer half the torn tortilla shells. Add half the sausage mixture and 1 cup of the cheese. Then repeat these layers. Beat the eggs and milk together adding a little salt and pepper to taste.
Remember the sausage and Rotel are already well seasoned. Pour the beaten egg and milk mixture on top. Let it all soak into the rest of the layers. Cover and refrigerate over night. Uncover and bake in preheated 350 degree oven for 30-45 minutes or until center bubbles. Serve hot for breakfast or any meal.
I always add the onions and bell peppers unless cooking for someone who doesn't like them. If you'd like it a bit less spicy, use regular sausage instead of the hot.
