Serves 8

2 (10 ounce) packages frozen chopped spinach
2 cups grated or shredded sharp Cheddar cheese
1 pound small curd cottage cheese
4 eggs, beaten
1 teaspoon finely grated onion
Pinch of salt
1 teaspoon lemon pepper

Thaw spinach and squeeze dry. Stir together all the ingredients and pour into a greased 9-inch pie plate. Set on a baking sheet. Bake at 350 degrees for a little under an hour or until the center just starts to get solid. Let set for about 5 minutes before cutting and serving.
