Serves 9-12
9 cooked lasagna noodles
2 (10-ounce) packages frozen chopped spinach
(or 5 cups fresh spinach, cut into bite-size pieces)
1 tablespoon chopped parsley
2 cloves garlic, minced
1/2 cup finely chopped sweet onions
1 1/2 pounds cottage cheese
2 eggs, beaten
1/4 teaspoon ground black pepper
1/4 teaspoon salt
2 cups Ragu (or your favorite marinara sauce)
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups shredded Mozzarella cheese
1 cup Ragu
1/3 cup Parmesan cheese
Cook spinach and drain well. Combine dry spinach with parsley, garlic, onions, cottage cheese, eggs, pepper and salt. In a buttered 9" X 13" baking dish, place first layer of three noodles and continue layering with 1/3 spinach mixture, 1/3 marinara, 1/3 cheeeses and then repeat until you have three layers of each. End with the cheese. Bake for about 35 minutes at 350 degrees. Remove from oven and let set for 10-15 minutes and then cut in 9-12 servings. Drizzle some of the Ragu over individual servings and top with Parmesan cheese.
This is a delicious recipe. Adding the sauce on the individual servings, adds flavor and looks terrific. You'll enjoy this recipe.
