Makes 1 1/2 cups.
*1 cup finely chopped sweet onions
1/4 cup finely diced red bell pepper
1/2 teaspoon Hungarian paprika
1 teaspoon sugar
2 drops Tabasco sauce
1/2 teaspoon salt
1 tablespoon fresh lemon or lime juice
Simply mix all ingredients together and place in an airtight glass container. Refrigerate. Use within a few days.
* Vidalia onions are the best for this recipe (if they are in season).
This relish is extra good on grilled burgers, hot dogs or sausages (or most any sandwich). But my favorite is to add a tablespoon to a scrambled egg. Fold over and serve hot. Just delicious.
You can add up to a tablespoon of sugar, but I find a teaspoon gives it just a hint of sweet.....yum!
