Tomato Basil Angel Hair Pasta

PADUCAH, KY - SuperValu Foods Recipe of the Week - Serves 2
8 ounces angel hair pasta
1/4 cup olive oil
2 green onions, chopped
1 clove garlic, minced
1 tomato, skin on, diced
1/4 cup marinated artichoke hearts, drained & chopped (optional)
1/4 cup torn fresh basil (1/2 teaspoon dried basil leaves)
1/4 cup fresh torn parsley (1/2 teaspoon dried parsley)
Salt and pepper to taste
1/3 cup shredded Parmesan cheese
Boil pasta while you are preparing the sauce. In the olive oil, over medium heat, saute the onion and garlic for about three minutes. Stir in the tomatoes, (artichokes), basil, parsley, salt and pepper. Stir and cook for another two minutes Serve over cooked pasta. Sprinkle fresh shredded Parmesan on top.
You can use any pasta you like with the sauteed tomatoes and herbs. Just make sure you do not over cook the pasta.
