Parmesan Summer Tomatoes
By Ro Morse
PADUCAH, KY - SuperValu & Cash Saver Recipe - Serves 3-4
3 large firm summer tomatoes
1/2 teaspoon garlic salt
Pinch ground black pepper
1/2 teaspoon oregano (1 tablespoon fresh minced oregano leaves)
1/2 teaspoon dried thyme (1 tablespoon fresh thyme leaves)
2 tablespoons grated sweet onion
2/3 cup shredded Parmesan cheese
If baking, preheat oven to 375 degrees. If broiling, heat broiler to medium-high.
Wash tomatoes, leaving skin on, slice into 3/4 inch thick circles (should be about three slices per tomato). Place tomato slices on baking sheet lined with foil. Sprinkle each slice with garlic salt, pepper, oregano, thyme and onion. Top with Parmesan and place under broiler or in hot oven for about 3 or 4 minutes or until cheese starts to melt. Serve hot or let cool and serve on your favorite sandwich, just like you would a plain tomato slice. Deeeeeelicious!
