Serves 4
A healthier version of the classic Waldorf salad

4 cups packed finely chopped kale
3 large stalks celery, thinly sliced 
1 large firm red apple, diced (divided)
2/3 cup walnuts, toasted and chopped (divided )
1/2 cup raisins (divided)
2 tablespoons Dijon mustard
2 tablespoons water, more if needed
1 tablespoon red wine vinegar
1/8 teaspoon sea salt
 
Place washed and chopped kale in a large bowl. Add the celery and half the diced apples to kale plus 1/3 cup walnuts and 1/4 cup raisins. Put remaining apple, walnuts and raisins in the blender plus mustard, water, vinegar and salt. Purée until well blended and starts to get thick. Add water if needed to thin. Pour dressing over kale mixture and toss. Such a great combination of flavors!
