Yellow Squash Grilled wtih Garlic & Feta

Serves 4
2 medium yellow squash
1/4 cup extra virgin olive oil 
1 large clove garlic, crushed  
Salt   
Pepper
3 ounces feta cheese, crumbles
4 sprigs fresh cilantro

Preheat the grill to medium heat. Cut the squash lengthwise into 1/4 inch to 1/2 inch thick slices. This should keep squash from falling through the grates on the grill. Heat olive oil in a small pan and add garlic clove. Cook over medium heat until the garlic starts to bubble and smell extra good. Brush the slices of squash with the garlic oil, and season with salt and pepper. Grill squash slices for 5 to 10 minutes on each side or until they are tender. Brush with additional garlic oil and turn occasionally to prevent sticking or burning. When ready to serve, sprinkle feta and cilantro leaves on top.
