Susan Lori Jenkins Carroll, age 59, of Paducah, Kentucky, passed away on Friday, July 17, 2026, at her home.
 
Susan was born in Paducah on March 5, 1967 to the late William Ray and Joyce Stovall Jenkins.  She was a member of Olivet Baptist Church.  Susan graduated from Heath High School in 1985, beginning a life marked by dedication, generosity, and care for those around her. She carried with her a spirit that made others feel welcome and valued. Throughout her life, she was the kind of person who noticed when someone needed help and stepped forward without hesitation, offering her time, and her heart.

One of Susan’s greatest joys was cooking, especially when she could prepare a meal for family, friends, or anyone in need. Her kitchen was a place of love, where food was prepared with thoughtfulness and care. She understood that a meal could be more than just food, and she often used her gift for cooking to bring people together and to lift the spirits of those around her. Her generosity was not limited to the table, as she was always willing to help those in need in whatever way she could.

Susan also had a deep love for animals. She would take in and rescue any animal that needed a safe place, and her compassion extended to animals great and small.  This same loving nature was evident in the way she cared for children, whom she dearly loved and enjoyed being around.

Those who knew Susan will remember her she had a way of making others feel seen and cared for, and her acts of kindness left lasting impressions on all who were fortunate enough to know her. Her life was a testament to the value of giving freely, loving deeply, and meeting the needs of others with grace.
 
Susan is survived by her husband of 40 years, Leroy Carroll, of Paducah; her son, Andrew Carroll of Paducah; her daughter, Pamela (Scott) Gregory of Paducah; three sisters, Christie (David) Starner of California, Mandy Jenkins of Paducah, and Missy (Josh) Smith of Murray, Kentucky; four grandchildren, Kaytlyn Carroll, Angela Carroll, Alyssa McDonald, and Alex McDonald.
 
She was preceded in death by her sister, Pam Hale, and her parents.
