Spicy Oven Roasted Zucchini

Makes 2 servings

1 medium-size zucchini 
1 tablespoon olive oil
1/4 teaspoon Creole or Cajun Seasoning
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
1 tablespoon KY Kernel Seasoned Flour

Preheat oven to 425 degrees. Wash zucchini and cut in 1/8 inch rounds (skin on). Place the rounds in a bowl and toss with olive oil to evenly coat. In a single layer, arrange the zucchini rounds on a baking pan. In a zip lock bag, combine creole seasoning, garlic powder, pepper and flour. Shake to mix. Sprinkle half the flour mixture on top of the rounds. Roast for 10-15 minutes. Remove pan, turn the rounds over and sprinkle rest of flour mixture on top. Roast for another 10 minutes or until golden brown and crispy.

If you'd like to serve these with a dipping sauce, whisk together 1/4 cup sour cream or plain yogurt and a pinch of Creole or Cajun Seasoning (to taste). Yum! Great as a side dish or appetizer.
