Makes 8 chicken strips

Vegetable cooking spray
2 large eggs
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup shredded coconut
3/4 cup Panko bread crumbs
1 pound boneless skinless chicken breasts, 
                              cut into strips (about 8)

Preheat oven to 400 degrees. Lightly spray a large baking sheet with cooking spray. In a large bowl, whisk together eggs, garlic powder, salt and pepper. In another bowl, combine the shredded coconut and bread crumbs. Dip the chicken strips in the egg mixture. Let extra drip off and then place into the coconut and bread crumbs mixture. Press the coconut mixture into the chicken to be sure all sides are totally coated. Place the coconut coated chicken on the baking sheet. Spray the tops of the chicken with cooking spray. Bake for about 12-15 minutes, just until the chicken is cooked through and the coating is crisp and golden brown.
