Serves 2-4
2 cloves garlic, minced
16-ounces boneless, skinless chicken breasts, cut in bite-size pieces
1/4 cup olive oil
1 1/2 cups broccoli florets
3/4 cup oil packed sun-dried tomatoes, drained
1 teaspoon dried basil
Pinch crushed red pepper flakes
Salt
Pepper
1/4 cup dry white wine
3/4 cup chicken broth
1 tablespoon butter
8 ounces bow tie pasta
1/4 cup fresh Parmesan cheese, shredded
In a deep heavy skillet, saute garlic and chicken in olive over medium hot heat for about eight minutes. Add the broccoli and cook another 3 minutes. Add the tomatoes, basil, red pepper, salt and pepper. Keep stirring, adding the wine, chicken broth and butter. Cook, stirring on and off for another 3-5 minutes. Serve over hot cooked bow tie pasta. Sprinkle Parmesan on top of each serving or over serving bowl.
