Cheddar & Maple Sausage Quiche

PADUCAH - Banks Market Recipe of the Week - Makes two 9-inch deep dish pies 

1 pound maple sausage
3/4 cup chopped sweet onion
3/4 cup green
             and/or red chopped bell pepper
10 slices Swiss cheese (or 1 1/2 cups shredded)
2 cups shredded sharp Cheddar cheese
12 eggs
1 1/2 cups milk
1 1/2 cups Half 'n Half
1/2 teaspoon salt
1/8 cup pure maple syrup
2 unbaked pie crusts

In a skillet, cook sausage, breaking into small pieces as it cooks. Add onion and peppers, cooking until veggies are tender. Line two pie places or quiche dishes with dough. Press dough into sides. Place half of Swiss slices in bottom of each unbaked crust. Sprinkle half of Cheddar cheese over slices of Swiss in each dish. Pour in sausage mixture - dividing equally between dishes and spread evenly over cheese. Whisk together the eggs, cream, salt and maple syrup. Pour equal amounts over sausage mixtures. Bake in 350 degree oven until center is set.....about 45 minutes to an hour. Keep checking after 45 minutes. Crusts should be golden brown and fillings should just become solid in centers. The thicker the mixture, the longer it takes to cook.

Before baking - if you find your second pie needs more egg mixture, whisk together 2 more eggs, 1/3 cup Half n Half, pinch of salt and a tablespoon of syrup. Pour on top of lowest filling.

Serve warm or slice. Cover individual slices with clear wrap and freeze. Great to warm up one piece at a time for breakfast or really - any meal.
