Makes 18 truffles
1 cup heavy cream
6 ounces unsweetened chocolate, chopped or shaved
1 1/4 cups sugar (1 cup if using Splenda or Stevia)
2 tablespoons unsalted butter
1 tablespoon vanilla extract
Cocoa Powder
In a heavy stock pot or double boiler, bring cream to low bubbling boil. Add sugar, butter and vanilla extract, stirring until smooth and creamy. Pour mixture into a bowl, cover and refrigerater until it cools and gets stiff. Remove and make into balls with a melon baller or two teaspoons. Roll in cocoa powder and place in foil candy papers or mini paper cups.
