Curried Chicken Salad

PADUCAH, KY - SuperValu Foods Recipe of the Week - Serves 6
2 whole chicken breasts
2 red apples, thinly sliced, leave peeling on
3 tablespoons concentrated orange juice
1 medium bunch white seedless grapes, halved
1 cup pecan halves
1/2 cup finely chopped celery (optional)
Cook, debone and chop the chicken. Add apples to the chicken and stir in the orange juice. Add grapes, pecans and celery. Gently mix all together.
Dressing
1 cup Hellmann's mayonnaise (lite version is fine)
1/2 cup milk
3 tablespoons sugar
2 tablespoons curry powder
Mix the dressing ingredients all together and pour over the chicken mixture. Garnish with chilled Mandarin orange sections and serve on lettuce leaves or torn dark spring greens.
