Savory Roasted Sweet Potatoes

PADUCAH, KY - Banks Market Recipe of the Week - Serves 8

2 pounds sweet potatoes, peeled, cut into 1-inch cubes 
2 (1 ounce) packages dry onion soup mix
1/3 cup extra virgin olive oil
Fresh sprigs rosemary

Preheat oven to 450 degrees. In a large bowl, toss the sweet potatoes with dry onion soup mix and olive oil until the sweet potatoes are well coated. Arrange the mixture on a large baking sheet. Bake in the preheated oven for about 45  minutes, or until the sweet potatoes are tender. 

I like to add some sprigs of fresh rosemary as soon as the potatoes come out of the oven. Extra tasty.
