Serves 6
1 unbaked pie crust
1 cup shredded sharp cheddar cheese
4 Vidalia onions, coarsely chopped
1/4 cup salted butter
4 eggs
1 cup sour cream
Salt
Ground black pepper
Dry ground mustard
Preheat oven to 350 degrees. Line deep dish pie plate with unbaked pie crust. Sprinkle cheese over crust. Set aside. In a skillet, saute onions in butter until golden brown. Stir often (important to cook until caramelized-nice and brown and sweet). Pour cooked onions over cheese in pie crust. Set aside. In a mixer or blender, beat eggs and sour cream. Add a pinch of salt, pepper and dry mustard. Pour beaten egg mixture over onions. Gently mix all together. Bake on center rack in preheated 350 degree oven for about 40 minutes. Check after 35 minutes. When center is solid, it's ready. Take out of oven and let it set for 15-30 minutes before slicing.
This is a really yummy recipe-ENJOY! After it cools, slice in serving size pieces. Slip single slices into small zip-lock bags and freeze. Great quick morning, or really anytime, treat.
You can also make this crustless. Make exact same way-just omit crust.
