Chicken & Apple Lettuce Wraps

PADUCAH, KY - Banks Market Recipe of the Week - Serves 6 

4 boneless, skinless chicken breasts, cut into bite size pieces
1 quart chicken or vegetable broth
1 teaspoon celery salt
1/4 cup nonfat plain Greek yogurt
1 tablespoon mayonnaise  
3/4 cup diced Granny Smith apples
1/2 cup diced celery
1/2 cup halved red grapes
1/4 cup slivered almonds or pecan halves
Pinch of ground nutmeg
12 cleaned lettuce leaves

Gently boil diced chicken breasts in chicken or veggie broth seasoned with celery salt. Once cooked, chill by running cold water over the chicken. Place the cooked/chilled chicken breast pieces in a large bowl. Stir in yogurt and mayo until chicken is all coated. Add apples, celery, grapes and nuts. Stir until all ingredients are well mixed. Top with a pinch of ground nutmeg. Serve in a lettuce leaf or roll up inside a soft tortilla shell, or stuff into a split pita bread. 

Store covered in the refrigerator until ready to serve.
