Serves 6
6 chicken breasts, boned and skinned
6 tablespoons butter
Salt
Pepper
6 slices mozzarella cheese
All-purpose flour
1 egg, beaten
Plain bread crumbs
1/4 cup butter
2 tablespoons chopped parsley
1/4 teaspoon ground sage
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1/2 cup dry white wine
Flatten the chicken breasts between sheets of waxed paper. Spread 1 tablespoon butter on one side of each breast. Season with salt and pepper. Place a slice of the cheese on each buttered chicken breast and roll up. Coat lightly with flour and dip in the beaten egg. Roll in bread crumbs and secure with wooden picks. Arrange in a shallow, lightly greased baking dish. Melt the next 1/4 cup butter with the herbs. Cover and bake at  350 degrees for 30 minutes (basting a couple of times). Uncover and pour wine over the chicken. Leave uncovered and bake another 20 minutes, basting often with the herb butter. YUM!
