Serves 8-10
Crust:
1 box yellow or butter flavored cake mix
1 large egg
8 tablespoons (1 stick) butter, melted
 
Preheat oven to 350 degrees.

In a large bowl, combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 9" X 13" baking pan.


Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 large eggs
1 teaspoon vanilla extract
8 tablespoons (1 stick) butter, melted
1 (16-ounce) box confectioners sugar
1 teaspoon ground cinnamon
1/2 to 3/4 teaspoon ground nutmeg


To make the filling: In a the same bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes, until the center is mostly set.


If desired, serve with dollop of whipped cream.
