Cashew Chicken & Veggie Stir-Fry

PADUCAH - Banks Market Recipe of the Week - Serves 4

1 teaspoon olive oil 
1/3 cup sliced sweet onions
1 cup thinly sliced red & yellow bell peppers
1 cup (fresh or frozen) broccoli florets
1 tablespoon olive oil
1 pound boneless skinless chicken breasts or boneless thighs, cut into 1-inch pieces
salt 
pepper 
4 cloves garlic, minced
1 cup whole cashews
1/4 cup chicken broth 
1/4 cup soy sauce
3 tablespoons honey
2 teaspoons cornstarch
1 tablespoon cold water
1 green onion, sliced (optional)
Rice (optional)
 
In a large heavy skillet, heat a teaspoon of oil over medium heat. Add the onions, bell peppers and broccoli. Cook for about 4 minutes or until vegetables are tender. Remove the veggies and place in a bowl. Cover. Wipe the pan with paper towel and return to stove top. Add the tablespoon of oil & turn heat to medium high temp. Season the chicken pieces with salt and pepper and add them to the hot pan. Cook for 3-4 minutes on each side or until golden brown and cooked through. Add the garlic, stir and stir, cooking a few seconds. Dump the earlier cooked veggies and cashews back to the pan and cook a couple more minutes or until they are hot. In a bowl, whisk together the chicken broth, soy sauce and honey. In a small bowl, mix the cornstarch with water. Pour the soy sauce mixture over the chicken and vegetables and cook another 30 seconds. Add the dissolved cornstarch and bring to a boil. Cook for another minute or until sauce starts to thicken. Sprinkle green onions over top (optional). Serve hot as is or with steamed rice. YUM! You can use any combination of your favorite fresh or frozen veggies for this recipe or peanuts or almonds instead of the cashews.
