Roasted Sweet Potatoes & Cranberries

PADUCAH - Banks Market Recipe of the Week - Serves 4-6

6 cups sweet potatoes,
              peeled & cut into 3/4 to 1 inch chunks
8 ounce bag fresh cranberries
1 tablespoon extra-virgin olive oil
2 tablespoons maple syrup
2 teaspoons ground cinnamon
1 teaspoon salt 

Preheat oven to 400 degrees. Line a large baking sheet with parchment paper. In a large bowl, mix the sweet potatoes, cranberries, oil, maple syrup, cinnamon and salt all together until coated. Pour onto the parchment-lined pan in a single layer. Roast for 30 to 40 minutes. Stir after 15 minutes. Roast until fork tender. Remove from the oven and serve warm.
